How about making eggs with a surprise filling? Homemade guacamole is the perfect filling for eggs.
A great snack at parties or just when you are having a few drinks with friends.


  • 2 EAT ME avocados
  • ½ EAT ME lime
  • ½ EAT ME jalapeño pepper (or ¼ EAT ME cayenne pepper)
  • 5 g chives
  • 1 clove garlic
  • 1 small shallot
  • 1 tomato
  • 10 eggs
  • salt & pepper

Let's get to work

  1. Boil the eggs for 8 to 9 minutes and allow to cool.
  2. Meanwhile, get started with the guacamole. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone, scoop out the fles and put in a bowl.
  3. Cut the lime in half and squeeze the juice on the avocado. Mash it with a fork but keep some texture.
  4. Cut the shallot and press the garlic with a garlic press.
  5. Rinse the pepper, cut in half and remove the seeds. Slice one half of the pepper very finely.
  6. Add the shallot, the garlic and the pepper to the avocado mixture.
  7. Finely chop the tomato and add to the mixture. Mix all ingredients together well.
  8. Add salt and pepper to taste.
  9. Then peel the eggs, cut in half and remove the egg yolk.
  10. Fill the eggs with the guacamole.
  11. Garnish with chopped chives.
