Would you like to serve a cheery and happy snack at Christmas, birthdays or other festive occasions? Then try making these grilled gambas on mango-butternut squash puree. The combination is perfect!

Ingredients

  • 1 EAT ME butternut squash
  • 1 EAT ME mango
  • 5 g EAT ME parsley
  • 5 g EAT ME dill
  • 10 gambas
  • 1 clove garlic
  • 3 tbsp. olive oil
  • salt & pepper
  • edible flowers

Preparation
  1. Preheat the oven to 180 ° C. Peel the butternut squash, cut the stem and the base and cut in half lengthwise. Remove the seeds with a spoon.
  2. Cut the butternut squash into large pieces and place on a baking tray.
  3. Cut the mango along both sides of the stone or use a mango cutter. Then cut some strips in the seedless flesh, without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango.
  4. Place the mango on the baking tray with the butternut pieces.
  5. Bake 20 minutes in the oven until done.
  6. Crush the garlic with a garlic press and finely chop the dill.
  7. Mix the gambas with the olive oil, garlic, dill, pepper and salt.
  8. Grill the gambas until done in a grill pan.
  9. Puree the mango and butternut squash until smooth.
  10. Place a layer of puree in appetizer glasses and put an edible flower and a bit of parsley on top.
  11. Insert a cocktail toothpick through the gambas and hang it in the glass.
