Would you like to serve tasty vegetarian snacks at a party or when you're having a drink? How about grilling baby corn on skewers? This looks very appetizing and they are very tasty!

Ingredients

Parsley hummus

  • 1 EAT ME lime
  • 10 g EAT ME parsley
  • 400 g chickpeas - drained 200 g
  • 2 tbsp. olive oil
  • 1 clove garlic
  • 1 tbsp. tahini
  • 1 tsp. cumin
  • salt and pepper

baby corn

  • 250 g EAT ME baby corn
  • ½ EAT ME rawit chili
  • 1 EAT ME coriander sprig
  • 50 g soft butter
  • 1 tbsp. honey
  • 2 tbsp. olive oil

Let's get to work

Preparation
  1. Bring water in a saucepan to a boil and cook the baby corn for about 4 minutes and then rinse with cold water.
  2. Puree all the ingredients for the parsley hummus until smooth and season with salt and pepper. If necessary, add a little water for extra creaminess.
  3. Halve the rawit chili and use one half only. Remove the seeds and cut the chili finely. Put this, together with the butter in a bowl.
  4. Rinse the coriander and chop finely then add it together with the honey to the butter mixture and mix well.
  5. Thread the baby corn on skewers and coat with olive oil. Heat a grill pan and grill the baby corn skewers on all sides.
  6. Brush the baby corn skewers with the butter mixture. Serve the skewers hot with parsley hummus.
