  • Grilled asparagus with vegetables

This oven dish is simple, but very nice. In a blink of an eye you slice the vegetables and while the oven is doing its work, you make a delicious fresh salad to serve together.

Ingredients

  • 450 g EAT ME green asparagus
  • 1 onion
  • 125 g chestnut mushrooms
  • 200 g small new potatoes in their skins
  • 1 red bell pepper
  • 12 black pitted olives
  • 2 tbsp. olive oil
  • 3 cloves garlic
  • pepper & salt

Let's get to work

Preparation
  1. Preheat the oven to 200 °C.
  2. Rinse the green asparagus and cut the bottom (1-2 cm) off.
  3. Rinse the bell pepper, cut in half and remove the seeds. Clean the mushrooms and the potatoes. Then slice the green asparagus, black olives, bell pepper, mushrooms and potatoes in large pieces. Mix all the vegetables together.
  4. Put on an oven tray and sprinkle olive oil on top. Add salt and pepper to taste. Chop the garlic and mix with the vegetables.
  5. Grill the vegetables for about 30 minutes until done.

Tip

This meal can be served either warm or cold. It is a delicious salad when cold.
