Surprise your guests with this delicious creamy soup made of green asparagus. Full of flavour and delicious combined with the Parmesan cheese snaps.


  • 450 g EAT ME green asparagus
  • 1 L water
  • 1 onion
  • 1 piece of butter
  • 2 vegetable stock cubes
  • 100 g grated Parmesan cheese
  • 100 ml cooking cream
  • Pepper & salt

Let's get to work

  1. Wash the asparagus. Cut the asparagus about one centimetre below the heads and put these aside. Cut the end (1-2 cm) off the asparagus. Cut the remaining part of the asparagus stem in large pieces.
  2. Put 1 litre of water in a soup pan and bring to the boil. Blanche the asparagus heads for 3 minutes in the boiling water.
  3. Take the asparagus from the water, rinse them with cold water and put aside. Keep the boiling water you used to blanch the asparagus heads in.
  4. Chop the onion finely.
  5. Place the butter in a cooking pan and fry the chopped onion for 2 to 3 minutes on medium high heat.
  6. Add the large asparagus pieces and cook for 2 minutes. Use the water you kept aside to deglaze.
  7. Season the soup according to taste with stock cubes. Let the soup simmer for 8 to 10 minutes.
  8. Preheat oven to 200 °C.
  9. In the meantime take an oven tray covered with baking paper. Place small round pieces of Parmesan cheese the size of a 2 Euro coin on it. Bake, until done in about 8 minutes.
  10. Use a stick mixer to puree the mixture until it is smooth. Add the cooking cream to the mixture. Add salt and pepper to taste.
  11. Pour the soup in the bowls. Place the asparagus heads in the middle as a decoration. Place the Parmesan snaps on the soup as well.
