This light and fluffy dessert is a real treat. Really fresh and fruity because of the sweet granadilla flavour. An extra advantage: The natural jelly-like structure of the fruit looks great as a beautiful topping.


  • 5 EAT ME granadillas
  • 2 EAT ME strawberries
  • 1 sprig EAT ME mint
  • 1 EAT ME curcuma
  • 100 ml cream
  • 100 ml milk
  • 20 g sugar
  • 2 sheets of gelatine

Let's get to work

  1. Leave the gelatine sheets to soak in cold water.
  2. Warm the milk and the sugar in a saucepan, do not bring to the boil.
    Add the gelatine sheets until they have dissolved in the milk.
  3. Take the saucepan off the heat and put the pan in cold water (in the sink for example),
    if possible with ice cubes.
  4. In the meantime, halve 3 granadillas, scoop out the flesh and add this to the still warm
    milk straight away.
  5. Whip the cream to a yoghurt like consistency.
  6. Halve 2 granadillas, spoon the flesh out and place in a bowl and use a whisk to stir.
  7. Peel the curcuma and cut in small pieces. Grind the pieces in a mortar (or use a kitchen machine).
    Add the ground curcuma to the flesh of the 2 granadillas and place the bowl in the fridge for 30 minutes.
  8. Use a spatula to fold the cold gelatine together with the whipped cream into a bavarois.
    Pour the granadilla bavarois into 3 glasses and put these in the fridge for 15 minutes.
  9. Divide the granadilla-curcuma mixture among the 3 glasses. Leave the bavarois to set for 30 minutes.
  10. Rinse the mint. Rinse the strawberries, remove the crowns and cut in half.
    Decorate each glass with a mint leaf and half a strawberry.
