  • Salad with snow peas and mango

This simple fresh salad looks very impressive because of all the colours in this dish. The combination of tangy, sweet and bitter flavours create a taste explosion.


  • 200 g EAT ME snow peas
  • 1 EAT ME mango
  • 100 g EAT ME green mini asparagus
  • 250 g cherry tomatoes
  • 2 cooked beetroots
  • 1 large carrot
  • 3 eggs

Let's get to work

  1. Boil the eggs for 8 minutes. Run under cold water and peel them. Place them in a bowl.
  2. In the meantime cut the mango along the stone or use a mango cutter. Slice the seedless flesh a few times
    to create a crosshatch pattern, without touching the skin. Then scoop the cubes of flesh from the skin.
  1. Half the carrot lengthwise and cut in slices.
  2. Blanch the snow peas, carrot and green asparagus separately (to keep the colours bright)
    for about 2-3 minutes in boiling water. Rinse immediately with cold water after blanching!
  3. Cut the eggs in wedges, halve the cherry tomatoes and cut the beetroots in even slices
  4. Make up the plates by putting the snow peas on first, then the carrot, the cherry tomatoes,
    the green asparagus, the mango and finally the eggs.


Give this salad a nice personal twist by adding a nice dressing, like a French dressing or a honey mustard dressing.
