A lovely mild soup made with garlic may sound a little odd. But if you cook the garlic slowly it becomes soft and sweet. That's why this soup is rather suprising. It also looks really classy!

Ingredients

  • 4 EAT ME fresh garlic cloves
  • 2 shallots
  • 200 g potatoes
  • 2 spring onions
  • 2 tbsp. olive oil
  • ½ L milk
  • 1.5 L vegetable stock
  • 2 dl cooking cream
  • Pepper
  • Sage (optional)

Let's get to work

Preparation
  1. Cut the brown end off the garlic and cut into pieces.
  2. Finely chop the shallots.
  3. Peel the potatoes and cut into cubes.
  4. Heat olive oil in a frying pan and fry the garlic, shallots and potato cubes.
  5. After 5 minutes, add the vegetable stock and bring the soup to a boil. After 2 minutes add the cooking cream and reduce heat to low.
  6. Cut the spring onions finely and add them to the soup.
  7. Puree the soup after 20 minutes with a stick mixer until smooth.
  8. Season to taste with salt and pepper.
  9. Garnish with a sage leaf.
