  • Filo pastry cups with green asparagus ragout

Would you like to make an easy, vegetarian and delicious appetizer for Christmas? Then go for the asparagus ragout in a crispy filo pastry cup.


  • 500 g EAT ME green asparagus
  • 4 sheets of filo pastry
  • 250 g mushrooms
  • 50 g butter
  • 60 g flour
  • 1 small onion
  • 1 litre milk
  • 2 vegetable stock cubes
  • 2 tbsp. olive oil
  • Pepper

Let's get to work

  1. Preheat the oven to 200 °C.
  2. Wash the asparagus. Cut the ends (1-2 cm) off the asparagus. Cut the asparagus in 1 cm long pieces. Dice the onion and cut the mushrooms into quarters.
  3. Heat the olive oil in a frying pan and fry the mushrooms and asparagus until tender, season with a pinch of pepper.
  4. Heat the butter in a saucepan and add the onion.
  5. Fry the onion on a low heat without letting the butter turn brown.
  6. Stir in the flour in and let it cook for a few minutes.
  7. Add 250 ml of milk and stir until it becomes more solid.
  8. Slowly add the rest of the milk and stir well so that it doesn't get lumpy.
  9. Crumble the stock cubes in the ragout and add the asparagus and mushrooms.
  10. Cut the filo pastry into pieces of about 10 by 10 cm and brush with olive oil. Place the filo pastry in a muffin tray so they overlap and create a cup.
  11. Bake the filo pastry cups in the oven for about 7 to 8 minutes.
  12. Fill the filo pastry cups with the asparagus ragout.
