With figs you can make a delicious jam. You can enjoy this jam anytime, in all kinds of dishes. A great treat for example is to combine the fig jam with a blini and confectioner's cream.

Ingredients

Blinis

  • 200 g buckwheat flour
  • 2 tsp baking powder
  • 2 eggs
  • 2.5 dl milk
  • 1 dl olive oil
  • salt and pepper

Confectioner's cream

  • 1 vanilla pod
  • 500 ml milk
  • 150 g sugar
  • 4 eggs
  • 2 tbsp. flour

Fig jam

  • 12 EAT ME figs
  • 1 EAT ME lime
  • 1 orange
  • 250 g jelly sugar
  • 2.5 dl water

Let's get to work

Preparation
  1. Peel the figs and cut into quarters, set two figs aside for garnishing.
  2. Bring the figs with the jelly sugar, lime juice and water to a boil, stirring continuously.
  3. Peel the orange and cut the peel into very fine strips.
  4. Add the orange peel to the jam and cook it for another 2 minutes.
  5. Remove the jam from the heat and let it cool in the fridge.
  6. Start making the blinis. Separate the egg yolks from the egg whites and beat the yolks. Place the egg whites in the fridge.
  7. Stir the egg yolks, flour, milk and baking powder with a pinch of salt and pepper until smooth.
  8. Fold the egg whites into the batter and make sure it remains light and airy.
  9. Heat olive oil in a pan and put 3 to 5 small spoonfuls of batter into the pan. Fry on medium heat. Once the batter has solidified, turn them over and bake them on the other side then let the blinis cool. Repeat until all the batter has been used.
  10. Start making the confectioner's cream by halving the vanilla pod lengthwise and scraping out the marrow.
  11. Place the marrow in a saucepan with the milk and half of the sugar and bring to the boil.
  12. Separate the egg yolks from the egg whites and mix the egg yolks with the remaining sugar. Then stir in the flour.
  13. Mix a splash of hot milk into the egg mixture and pour back into the saucepan. Stir well.
  14. Bring the confectioner's cream to a boil and simmer on low heat for about 3 minutes. Then cover the confectioner's cream and let it cool down.
  15. Place some confectioner's cream on each blini and put the fig jam on top.
  16. Garnish the blinis with a fig wedge.
