  • Fennel salad with passion fruit dressing

Enjoy this nice fresh salad combined with the aniseed-like taste of fennel and delicious fresh sweet passion fruit. Especially tasty because of the crunchy pieces of roasted cashew nuts.


  • 3 EAT ME passion fruit
  • ½ EAT ME cayenne pepper
  • 10 g EAT ME mint
  • 10 g EAT ME basil
  • 3 fennel bulbs
  • 1 orange
  • 50 g olives
  • 100 g cashews
  • 4 tbsp. olive oil
  • salt & pepper

Let's get to work

  1. Halve the passion fruit and scoop out the flesh. Put the flesh in a bowl.
  2. Halve the cayenne pepper remove the seeds and chop finely. Add to the passion fruit and season with salt and pepper.
  3. Wash the orange and dry with a paper towel. Grate the orange peel over the dressing.
  4. Then cut the peel off and slice the orange into segments and set them aside. Squeeze the remainder of the orange juice into the dressing.
  5. Strain the dressing so that there are no more seeds in it. Put a stick mixer in the bowl and add the olive oil drop by drop.
  6. Wash the fennel bulbs, remove the tough core and shave them finely.
  7. Add the fennel to the orange segments and mix the dressing well into it.
  8. Roast the cashew nuts in a frying pan and finely grind them in a mortar.
  9. Rinse the mint and basil and chop coarsely and cut the olives into pieces.
  10. Divide the chopped herbs, cashew nuts and olives over the salad.


Great with the salad: various homemade bruschettas with a tapenade and rocket salad or roasted bell peppers and anchovies for example.
