Are you having a party or friends coming over for drinks?
This is a surprising delicious variation to the original croquette because of the sweet potato
and the refreshing taste of fresh dill.

Ingredients

  • 400 g EAT ME sweet potatoes
  • 1 sprig EAT ME dill
  • 16 large unpeeled, raw gambas
  • 50 ml milk
  • 1 clove of garlic
  • 1 egg
  • 150 g bread crumbs
  • pepper & salt

Let's get to work

Preparation
  1. Peel and rinse the sweet potatoes. Boil them for 15 minutes in salted water.
  2. Peel the 12 gambas leaving the tail on. Peel the other 4 gambas completely and cut in pieces.
  3. Roughly chop the dill and crush the garlic.
  4. Puree the sweet potatoes and add the gamba pieces, the roughly chopped dill, garlic and milk.
    Bring to taste with pepper and salt.
  5. Use 2 tablespoons to make the dough into 12 equal balls. Scoop 1 spoon full of the mixture,
    then remove it with the other spoon and continue doing this until you get a nice round shape.
  6. Put a gamba in the ball, but leave the tail sticking out. Leave the balls to cool down in the fridge.
  7. Heat the deep fryer to 180°C.
  8. Beat the egg and put bread crumbs in a separate bowl.
  9. Roll the balls through the beaten egg and then roll them through the bread crumbs. Do this twice.
  10. Fry the croquettes in about 4 minutes until they are brown.
