  • Cream puffs filled with avocado mousse

Who doesn't like cream puffs? Instead of using cream, try avocado mousse for a change. Surprising and refreshing!


Cream puff pastry

  • 100 ml milk
  • 50 g butter
  • 50 g flour
  • 3 eggs
  • 1 tbsp. olive oil
  • salt



  • 1 EAT ME avocado
  • 1 EAT ME lime
  • 1 dl. coconut cream
  • 1 gelatine leaf
  • 2 dl cream
  • 3 tbsp. maple syrup
  • 100 g dark chocolate

Let's get to work

  1. Preheat oven to 210 C.
  2. Put the milk and butter in a saucepan to make the puff pastry dough. Bring to the boil until the butter is melted. Reduce heat and add the flour. Leave the mixture on a low heat for 1 minute. Remove the pan from the heat, add 1 egg and stir until the egg is thoroughly mixed into the pastry dough. Then add the other eggs one at a time and mix until you have a nice, smooth pastry dough. Leave the pastry dough to cool down for 15 minutes.
  3. Grease a baking tray and dust with flour. Then fill a plastic piping bag with the pastry dough.
  4. Pipe small rounds on the baking sheet, 3 cm apart.
  5. Bake the puffs in approximately 10 to 12 minutes, let them cool completely.
  6. Soak a gelatine leaf in cold water. Put the coconut cream in a saucepan and bring slowly to the boil. Then turn down the heat.
  7. Squeeze excess water from the gelatine sheet and add it to the coconut cream. Use a whisk to stir until the gelatine is dissolved. Put the pan in a cold water basin for 10 minutes.
  8. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Use a spoon to remove the stone. Peel the avocados or scoop out the avocado flesh and mash until smooth.
  9. Add the avocado to the coconut cream and place the pan back into the cold water basin.
  10. Whisk 1 dl of cream until you have a thick yogurt-like consistency and stir into the avocado mixture.
  11. Cut the lime in half. Squeeze the juice from the fruit and add along with the maple syrup to the avocado mixture.
  12. Fill a piping bag with the avocado mixture. Use a knife to cut into the bottom of the cream puffs. Fill the cream puffs with the avocado mixture and refrigerate.
  13. Melt the chocolate with the 1 dl of cream in a saucepan over a low heat. Don't let the chocolate get too hot.
  14. Dip the top of the cream puffs into the warm chocolate mixture. Put the cream puffs on a plate and leave to set in the fridge.
  15. Serve on an attractive serving platter.
