  • Cranberry turban cake with sugared kumquats

This cranberry turban cake is the perfect treat to serve with coffee or tea at Christmas. Even more special because of the sugared kumquats!

Ingredients

  • 175 g EAT ME cranberries
  • 4 EAT ME kumquats
  • 200 g of soft butter + a dab for greasing
  • 200 g of brown sugar
  • 100 g sugar
  • 200 g icing sugar
  • 200 g flour
  • 4 eggs
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 2 tbsp. + 100 ml water

Let's get to work

Preparation
  1. Preheat the oven to 160 ° C.
  2. Use a kitchen machine to mix the butter with the brown sugar and add the eggs.
  3. Add the flour, cinnamon, baking powder and salt to the dough.
  4. Rinse the cranberries and mix them gently through the dough.
  5. Grease the turban cake tin with some butter and pour the dough into the tin.
  6. Bake the cake in about 45 to 50 minutes and allow to cool well.
  7. Sift the icing sugar and mix with 2 tablespoons of water into a glaze.
  8. Heat the rest of the water with the sugar and let the sugar dissolve.
  9. Cut the kumquats into thin slices and add to the sugar water.
  10. Boil the kumquats for about 25 minutes and simmer for a further 15 minutes on low heat.
  11. Remove the kumquats from the pan and allow to cool on a baking tray.
  12. Drizzle the glaze over the turban and decorate with slices of kumquats.
