This couscous salad with sharon fruit has a spicy and fruity flavour at the same time. By arranging the couscous into small towers this recipe will get a classy appearance, perfect for a special occasion.

Ingredients

  • 2 EAT ME sharon fruit
  • 10 g EAT ME chives
  • ½ red bell pepper
  • 20 g walnuts
  • 2 slices goat cheese
  • 50 g couscous
  • 1 tbsp ginger syrup
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • pepper & salt

Let's get to work

Preparation
  1. Cook the couscous according to the instructions on the packet and leave to cool down.
  2. Rinse the sharon fruit. Peel the sharon fruit and cut into small cubes. Rinse the bell pepper,
    cut in half and remove the seeds and cut into small pieces
  3. Chop the walnuts roughly.
  4. Rinse the chives. Cut the chives stems coarsely.
  5. Combine the couscous with the bell pepper, chives, walnuts and half of the sharon fruit pieces.
  6. Add ginger syrup, cinnamon pepper and salt to taste.
  7. Take a round mold and fill this with couscous, add a slice of goat cheese and top off
    with a few pieces of sharon fruit. Make a another tower on the other plate.
  8. Sprinkle brown sugar on the towers and caramelize with a brulee burner.
