  • Cod with green mini asparagus and mini leek

Cod is a popular fish species and has a wonderfully mild flavour. Spice up the cod with the flavours of green mini asparagus and mini leek.

Ingredients

  • 200 g EAT ME mini leek
  • 200 g EAT ME mini green asparagus
  • 200 g garden peas
  • 300 g potatoes
  • 75 g watercress
  • 4 cod fillets
  • 3 eggs
  • 200 ml white wine
  • 150 g + knob of butter
  • 100 ml milk
  • olive oil
  • salt and pepper

Let's get to work

Preparation
  1. Preheat the oven to 180 °C.
  2. Peel the potatoes, cook until tender and mash them. Add 75 grams of butter and milk to the puree and season with salt and pepper.
  3. Finely chop the watercress and mix into the mashed potatoes.
  4. Grill the green mini asparagus and mini leek and cook the garden peas for about 5 minutes until done.
  5. Split the eggs and put the egg yolks in a pan and put on the heat. While beating, add the white wine until it is foamy. Add 75 grams of butter in small cubes and season with salt and pepper.
  6. Heat a knob of butter in a frying pan and fry the cod on its skin for about 5 minutes. Turn the cod and fry for another 2 minutes.
  7. Decorate the plate with the grilled mini vegetables, make little turrets from the mashed potatoes and place the cod in between the vegetables. Then equally divide the sauce over the plates.
