  • Cod fillets with baked pepino

You can prepare this delicious fish recipe in 30 minutes. The cod fillets get an exotic twist by adding baked pepino.


  • 1 EAT ME pepino
  • 6 sprigs EAT ME chives
  • 4 big potatoes
  • 400 g cooked beetroot
  • 650 g cod (4 pieces)
  • 1 clove garlic
  • 6 tbsp olive oil
  • 1 tsp sugar
  • 1 tbsp vinegar
  • pepper & salt

Let's get to work

  1. Pre heat oven to 180 °C.
  2. Cut the pepino in half. Cut in pieces and remove the skin. Slice the pepino in 1 by 1 cm cubes.
  3. Wash the potatoes and cut in wedges.
  4. Place the potato wedges in an oven dish. Splash 3 tablespoons of olive oil, a pinch of salt and the crushed garlic over the top. Bake in the oven 20 to 25 minutes until done and golden brown.
  5. If needed remove the skin of the cooked beetroot and cut them in nice cubes. Put the cubes in a saucepan together with the sugar and vinegar. Put on low heat and season with pepper and salt to taste.
  6. Bake the cod in a frying pan using 2 tablespoons of olive oil. Bake golden brown on both sides in about 3 minutes and place them on a oven tray. Put the frying pan aside to bake the pepino in later.
  7. Place the cod fillets with the potatoes in the oven for the last 4 minutes.
  8. In the meantime bake the pepinos in the frying pan for 5 to 8 minutes on medium high heat until light brown and shiny.
  9. Rinse the chives. Cut the chives and add to the pepino. Add pepper and salt to taste. Lower the heat and continue cooking for another 3 to 4 minutes.
  10. Arrange the plates with a piece of cod and a few potato wedges from the oven, garnish with a large spoon of beetroot. Place the pepino pieces on top of the cod filets.
