Boost your energy with this delicious homemade coconut muesli bar. Hard to make? No way! Using a grater or a kitchen machine you can make these muesli bars in an instant.


  • 1 EAT ME coconut
  • 8 dried figs
  • 10 candied dates
  • 5 tbsp. honey
  • 3 tbsp. pistachios

Let's get to work

  1. Open the coconut by making holes in 2 of the 3 eyes at the bottom of the fruit. Pour the coconut water in a bowl. Use a hammer to hit all over the coconut until it breaks open. Remove the coconut flesh out of the shell and grate finely.
  2. Put the honey in a saucepan and bring to the boil. Leave the honey to simmer gently for 5 minutes.
  3. Combine the pistachios, dates and figs in a kitchen machine and mix until crumbly. Then stir in the honey and half the grated coconut.
  4. Take a cake tin and line it with baking paper.
  5. Place the coconut mixture in the cake tin, smooth the top with a spatula and sprinkle the remaining grated coconut over the top.
  6. Place in the refrigerator for about 30 minutes until the coconut mixture is firm.
  7. Remove the mixture from the tin and cut in about 8 bars.
