Coconut macaroons are delicious biscuits. Crunchy on the outside and soft on the inside. Easy to make and really delicious when using fresh coconuts.


  • 2 EAT ME coconuts -200g dried coconut
  • 1 EAT ME lime
  • 2 eggs
  • 170 g of sugar
  • 40 g of butter
  • 1 tsp vanilla sugar
  • Butter

Let's get to work

  1. Preheat the oven to 170 C⁰ degrees.
  2. Open the coconut by drilling holes in two of the three eyes, at the bottom of the fruit. Pour the coconut water in a bowl. Hit it with a hammer all over untill it cracks open. Now cut the flesh of the coconut from the shell.
  3. Using a vegetable peeler, remove the brown skin from the flesh. Grate the flesh as finely as possible with a grater or use a food processor.
  4. Spread the grated coconut on a baking tray and let it dry out for about 20 minutes at 120 degrees C⁰, in the oven.
  5. Mix the sugar, eggs, vanilla sugar and butter together. Add the dried coconut to the mixture so that it becomes a stiff dough.
  6. Cut the lime in half. Squeeze the juice from the fruit, add it to the dough and mix well.
  7. Make balls of 30 to 35 grams and place on a greased baking tray. Press the balls halfway down.
  8. Bake the coconut macaroons for 18 to 20 minutes at 170 degrees C⁰ until golden brown.
