Would you like to prepare a tropical lunch? This ciabatta recipe with roasted chicken and sweet mango will definitely be enjoyed by everyone. Add a bit of Mexican seasoning to your ciabattas and your summer lunch is complete.

Ingredients

  • 1 EAT ME mango
  • 4 ciabattas
  • 300 g chicken breast fillet
  • 8 leaves of lollo verde lettuce
  • 40 g pine nuts
  • 1 tbsp Mexican herbs
  • A piece of butter

Let's get to work

Preparation
  1. Pre-heat the oven to 180°C.
  2. Season the chicken breast fillet with the Mexican spices.
  3. Melt the butter and sear the chicken breast on both sides in a scorching hot pan.
  4. Then put the chicken breast in the pre-heated oven for about 10 minutes until done.
  5. Roast the pine nuts in a dry frying pan.
  6. When the chicken fillet is done, take it out of the oven and allow to cool.
  7. Cut the mango along the stone or use a mango cutter. Slice the seedless flesh a few times
    to create a crosshatch pattern, without touching the skin. Then scoop the strips of flesh from the skin.
  1. Cut the ciabattas horizontally and put a few rinsed lettuce leaves on the bottom half.
  2. Cut the chicken breast in slices and layer alternately with Mexican chicken slices and mango.
  3. Garnish the ciabattas with the roasted pine nuts.
