  • Chili con carne with mango

This chili con carne with an exotic twist is quick and easy, healthy and very delicious. If you or your family don't like it too spicy, Don't add the cayenne chilli.

Ingredients

  • 1 EAT ME mango
  • 1 EAT ME cayenne pepper
  • 250 g minced beef
  • 1 red bell pepper
  • 2 spring onions
  • 1 onion
  • 1 clove garlic
  • 1 tbsp. olive oil
  • 240 g kidney beans (can)
  • 70 g tomato purée
  • 200 g brown rice

Let's get to work

Preparation
  1. Chop the onion and the garlic finely.
  2. Cut the stems off the spring onion and slice the remaining part in ½ cm pieces.
  3. Dice the bell pepper in cubes of 1 by 1 cm.
  4. Rinse the cayenne pepper, slice in half and remove the seeds. Slice the chilli very finely.
  5. Slice the mango along both sides of the seed or use a mango cutter. Cut a few slices in the flesh without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango.
  6. Cook the rice according to the instructions on the packet.
  7. Use the olive oil to bake the minced beef until brown in a frying pan.
  8. Add the onion, bell pepper, cayenne pepper and tomato purée and continue baking for another four minutes.
  9. Add the kidney beans including the liquid and bring to the boil, stirring continuously. Let it simmer gently for 5 minutes.
  10. Turn the heat down and combine the mango and the spring onion with the chili con carne.
  11. Serve the chili con carne and the rice in a deep plate.
