  • Chicken curry with baked mini pineapple

A delicious chicken curry made the same way as usual with the delicious flavour from the mini pineapple. It's so easy to prepare, no need for packets of instant food mix!


  • 1 EAT ME mini pineapple
  • ½ shallot
  • 2 chicken fillets
  • 40 g chicken seasoning
  • 125 g brown rice
  • 10 g flour
  • 75 ml milk
  • 25 ml cream
  • ½ tbsp. curry powder
  • ½ vegetable stock cube
  • 4 pieces of butter
  • ½ tbsp. cane sugar
  • pepper & salt

Let's get to work

  1. Pre heat oven to 180 °C.
  2. Season the chicken fillets with the chicken seasoning. Use a piece of butter to sear the chicken fillets in a frying pan. Place the chicken fillets on an oven tray lined with baking paper. Place the chicken fillets in the oven for about 8 to 10 minutes until done.
  3. Cook the brown rice according to the instructions on the packet.
  4. Cut the mini pineapple by removing the leaves at the top with a sharp knife. Cut the mini pineapple lengthwise in half. Slice the mini pineapple in such a way that you have 6 wedges.
  5. Bake the mini pineapple wedges on both sides, one by one with a piece of butter, until brown in a frying pan on medium heat. Half way through add ⅙ of the cane sugar and let it caramelise.
  6. Slice the shallot finely. Use a frying pan and a piece of butter to fry the shallot for 4 minutes. Add the curry powder and bake for another 3 minutes.
  7. Add the flour and cook shortly. Turn down the heat and add half of the milk. Use a whisk to stir constantly until the milk has been absorbed into the mixture.
  8. Add the rest of the milk, the cream and half a vegetable stock cube to the mixture, bring to the boil stirring constantly. Turn the heat down and add salt and pepper to the sauce to taste.
  9. Warm the baked mini pineapple and the chicken fillets for another 4 minutes in the oven.
  10. Put the rice on the plates, cut the chicken fillet in slices and place on top of the rice. Decorate each plate with 3 mini pineapple wedges. Pour the curry sauce over the plates.
