For the chicken burger:

  • 1 EAT ME cayenne pepper
  • 1 kilo chicken mince
  • 1 shallot
  • 1 tbsp. chicken seasoning
  • 2 tbsp. sweet soy sauce (ketjap manis)
  • ½ tbsp. curry powder
  • 3 tbsp. breadcrumbs
  • 1 iceberg lettuce
  • 7 hamburger buns

For the mango-kiwi salsa:

  • 3 EAT ME kiwis
  • 1 EAT ME mango
  • 10 g EAT ME ginger
  • 1 EAT ME lime
  • 25 ml apple juice
  • 2 tbsp. honey
  • 1 tbsp. potato starch or corn flour

Let's get to work

  1. Start up the barbecue.
  2. Begin preparing the mango-kiwi salsa by peeling the kiwis and slicing them in cubes.
  3. Rinse and slice the cayenne pepper in half and remove the seeds. Use 1 half for the salsa and the other half for the chicken burgers. Chop the pepper very finely. Grate the ginger finely. The ginger doesn't need to be peeled then.Slice the mango along both sides of the seed or use a mango cutter. Cut a few slices in the flesh without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Use a spoon to remove the cubes from the mango. Slice the lime in two. Squeeze or use a fork to get the juice out. Put the juice in a saucepan together with the apple juice, kiwi, honey, mango, pepper and ginger. Bring to the boil on a low heat.Thicken the salsa by adding the corn flour or potato starch and turn the heat off. When you use potato starch the salsa will stay clear. leave the salsa to cool down.
  4. Continue with the chicken burgers. Slice the shallot finely. Add the shallot to the chicken mince in a bowl. Then add the chicken seasoning, sweet soy sauce, bread crumbs, curry powder and the other half of the cayenne pepper to the chicken mince. Mix it all together. Divide the mince in 7 equal parts and make burgers.
  5. Place the chicken burgers on the pre-heated barbecue and grill them on both sides for about 12 minutes. The burgers can also be cooked in a grill pan.In the meantime, chop and wash the lettuce. Leave to drain in a colander.Slice the buns open when the burgers are nearly done and grill them on the barbecue as well for about 2 minutes.
  6. Take the buns off the barbecue and put them on a plate. Put some lettuce and the chicken burger on the buns. Top them off with the salsa.
