  • Carrot cake with mini carrots

All the way from America the carrot cake is now also a favourite treat in the Netherlands. Soft and creamy cake with a sweet cream cheese layer. This cake is made extra special by the glazed carrots as a topping. You can just eat these as well!

Ingredients

Dough

  • 700 g large carrots
  • 200 g brown sugar
  • 375 g flour
  • 100 g soft butter
  • 1 ½ dl sunflower oil
  • 4 eggs
  • 1 tsp cinnamon
  • 1 tsp. salt
  • 1 tsp. 5 spice seasoning
  • 100 g raisins
  • 120 g walnuts

Topping

  • 1 EAT ME lime
  • 200 g mini carrots
  • 500 g cream cheese
  • 450 g quark
  • 1 orange
  • 100 g icing sugar
  • 2 gelatin leaves
  • 2 tbsp. apricot jam
  • 8 walnuts
  • 50 g slivered almonds

Let's get to work

Preparation
  1. Preheat the oven to 175 °C. Grate the carrots and chop the walnuts coarsely.
  2. Mix the butter, oil and eggs in a food processor and then add the brown sugar. Mix well.
  3. Add the flour, cinnamon, salt and five spice seasoning to the dough and fold in the carrots, walnuts and raisins.
  4. Grease a cake tin and spoon the dough in it.
  5. Bake the cake in about 50 minutes until done. Let the cake cool down for 2 hours.
  6. Meanwhile, make the filling. Cut a lime in half and squeeze the juice from the fruit. Juice the orange.
  7. Heat the orange and lime juice in a saucepan and add the gelatin leaves. Do not boil the juice. Take the juice from the heat once the gelatin has dissolved.
  8. Stir the cream cheese, quark and the icing sugar together until it is light and airy. Add the juice. Mix well and refrigerate.
  9. Peel the mini carrots and cook until done in about 4 minutes. Heat the apricot jam in a small saucepan and glaze the mini carrots with jam.
  10. Toast the slivered almonds in a dry frying pan until golden brown.
  11. Cut the cake into 2 equal layers. Divide half of the cream cheese filling over the bottom layer. Put the top layer on and divide the rest of the cream cheese over the top.
  12. Garnish with slivered almonds, mini carrots and walnuts.
