Are you familiar with the classic apple tarte tatin? Try using a different fruit for a change. Carambola has a fresh taste and is a beautiful star-shaped fruit. This gives the tarte tatin a lovely appearance!

Ingredients

  • 2 EAT ME carambolas
  • 5 g EAT ME ginger
  • 1 EAT ME lime
  • 4 sheets of puff pastry
  • 1 tsp. cinnamon
  • 1 tsp. vanilla sugar
  • 50 g pistachios
  • 50 g walnuts
  • 20 g butter
  • 75 g sugar

Let's get to work

Preparation
  1. Preheat the oven to 200 °C.
  2. Thaw the puff pastry and cut into the same size as the bottom of the mold. Grease the baking tins with butter.
  3. Chop the walnuts and pistachios coarsely.
  4. Cut the lime in half. Squeeze the juice from the fruit.
  5. Peel the ginger and chop very fine. Then mix along with the sugar, cinnamon, vanilla sugar, the lime juice the pistachios and walnuts.
  6. Cut the carambola in slices and place them in the molds overlapping one another. Sprinkle the nut mixture on top.
  7. Place the pastry on top of the nut mixture and press the pastry down well so that all the caramnbola slices are covered.
  8. Bake the tartes tatin in approximately 16 to 18 minutes in the oven until done.
  9. Let the molds cool down and then remove the tartes tatin out of the molds carefully.
  10. If you like you can add a scoop of ice cream.
