Add a cheerful note to your salad by adding the star shaped fruit. A wonderful fresh salad to serve with your main meal.

Ingredients

  • 1 EAT ME carambola
  • 1 EAT ME lime
  • 25 g mixed salad
  • ¼ cucumber
  • ½ red pepper
  • 1 tomato
  • 15 g pine nuts
  • 1 tbsp honey
  • 2 tbsp olive oil

Let's get to work

Preparation
  1. Cut the red pepper in half, remove the seeds and cut in small thin slices.
  2. Rinse the Carambola, slice the fruit so you get nice star like shapes.
  3. Roast the pine nuts in a dry frying pan.
  4. Slice the tomato in small wedges and the cucumber in thin slices.
  5. Halve the lime and squeeze the juice out by hand or use a fork.
  6. Mix the lime juice, the honey and the olive oil to make a dressing.
  7. Combine the salad, tomato, the cucumber and the dressing together.
  8. Garnish the salad with the star shaped Carambola and the roasted pine nuts.
