Who wouldn't like a soft curd with a fruit sauce? This special sauce made with the sweet to slightly tangy cactus figs are wonderful combined with creamy curd. It's your choice to have this for breakfast or as a desert.

Ingredients

  • 4 EAT ME cactus figs
  • 1 EAT ME lime
  • 125 g EAT ME blackberries (decorating)
  • 100 g EAT ME red currants (decorating)
  • 150 g gelatin sugar
  • 500 g low fat soft curd cheese

Let's get to work

Preparation
  1. Stick a fork in the cactus fig and cut both ends off the fruit. Score the skin lengthwise.
    The skin can now be removed easily with a fork. Cut the flesh in large pieces.
  2. Put the gelatin sugar in a saucepan and add 150ml of water. Bring to the boil.
    Then add the cactus figs and cook the mixture for 10 minutes on a low heat.
  3. Sieve the cactus mixture. Put half of the seeds from the sieve back in the sauce.
  4. Cut the lime in two. Squeeze the juice out by hand or use a fork.
    Add the lime juice to the sauce and simmer gently for another 2 minutes.
  5. Leave to cool down to room temperature. Spread the sauce in a larger bowl
    and leave to cool in the fridge for at least 1 hour.
  6. Fill an ice cream coupe or glass with low fat curd cheese an decorate
    with 2 spoons of cactus fig sauce.
  7. Rinse the blackberries and red currants.
    Decorate the coupes with a sprig of red currants.
