Is apple strudel with vanilla sauce the only strudel variety you know? There are many more possibilities. Go for a hearty strudel with butternut squash and feta, for example!


  • 1 EAT ME butternut squash
  • 150 g feta
  • 1 onion
  • 1 red bell pepper
  • ½ courgette
  • 50 g sunflower seeds
  • 50 g cashew nuts
  • 2 eggs
  • 2 tbsp. olive oil
  • salt and pepper
  • 1 roll puff pastry (fresh)

Let's get to work

  1. Peel the butternut squash and cut in half lengthwise. Remove the seeds with a spoon and then cut the butternut squash into cubes of 1 by 1 cm.
  2. Cut the bell pepper and courgette into equal sized cubes.
  3. Finely chop the onion and garlic.
  4. Heat olive oil in a pan and fry the onion and the garlic. Then add the courgette, the butternut squash and the bell pepper. Season to taste with salt and pepper.
  5. Bake for about 7 minutes on medium heat, then cool down.
  6. Preheat the oven to 180 ° C.
  7. Crumble the feta through the vegetables and add the cashew nuts and sunflower seeds.
  8. Whisk 1 egg and mix through the vegetables.
  9. Roll out the puff pastry and cut a piece of about 40 cm. Place the butternut squash filling in the middle of the puff pastry and roll up the strudel.
  10. Turn the roll upside down so that the seam is at the bottom.
  11. Whisk the other egg and brush the puff pastry with this.
  12. Bake the strudel in the oven for about 20 minutes until done. Brush some more egg on the strudel halfway through.
  13. Serve the butternut squash warm.
