Fancy a delicious autumn dish? Stews are incredibly tasty and fill the house with a delightful aroma. The powerful taste of a stew is enhanced when combined with sweet butternut squash. It looks great as well and you also get your daily serving of vegetables this way.

Ingredients

  • 2 EAT ME butternut squash
  • 800 g beef stew meat
  • 100 g freshly shelled peas
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 tbsp. tomato paste
  • 1 clove garlic
  • 4 dl water
  • 2 bay leaves
  • 1 tbsp. cornflour
  • 1 beef stock cube
  • 2 tbsp olive oil
  • pepper and salt

Let's get to work

Preparation
  1. Season the beef stew meat with salt and pepper.
  2. Heat the olive oil in a frying pan and fry the meat for 3 minutes.
  3. Crush the garlic with a garlic press and add to the meat.
  4. Add the tomato puree and bay leaf and cook for about 1 minute.
  5. Deglaze with water and bring to a boil.
  6. Turn down the heat and let it simmer for about 60 to 70 minutes with the lid kept on the pan.
  7. Cut the stem and the bottom of the butternut squash. Cut the butternut squash in half lengthwise. Remove the seeds with a spoon.
  8. Cook the squash until done in about 25 minutes.
  9. Dice the onion and the red and yellow bell pepper.
  10. Remove the squash from the pan and let cool down for 10 minutes. Then spoon some of the flesh out of the pumpkin. Leave some flesh at the back of the shell to keep the butternut squash firm.
  11. Mash the flesh and season with salt and pepper.
  12. Stir fry the red and yellow bell peppers, red onion and peas for about 3 minutes and add to the meat and let them simmer along for about 15 minutes.
  13. Add a beef stock cube.
  14. Mix the cornflour with 2 tablespoons of water and mix to a paste. Add this to the meat.
  15. Season to taste with salt and pepper.
  16. Heat the pumpkin puree for about 3 minutes in a saucepan.
  17. Place the stew in the hollowed-out pumpkins and serve with pumpkin puree.
