  • Butter cake with granadilla curd

Give your butter cake a delicious flavour by adding a layer of nice granadilla curd. This way the cake looks festive and mouth-watering. In addition, the layer also makes the cake extra creamy.


  • Cake
  • 250 g butter
  • 250 g caster sugar
  • 250 g flour
  • 5 eggs
  • ½ tsp. baking powder
  • ½ cup milk
  • salt
  • Granadilla curd
  • 3 EAT ME granadillas
  • 150 g icing sugar
  • 200 g butter
  • 2 eggs
  • 3 egg yolks

Let's get to work

  1. Preheat the oven to 160° C
  2. Mix the butter, sugar and milk together in a food processor.
  3. When everything is mixed, add the flour, baking powder and salt.
  4. Grease a cake tin and pour in the batter into the cake tin.
  5. Bake the cake in the oven for about 45-50 minutes until done.
  6. Meanwhile, make the granadilla curd. Separate the 3 egg yolks from the egg whites. Put the egg yolks in a mixing bowl and add the icing sugar and add another two eggs to it.
  7. Cut the granadilla in half and scoop the flesh out. Add this to the eggs.
  8. Cut the butter into cubes and add this to the eggs aswell.
  9. Prepare the curd in a au bain-marie. Put the bowl in a pan with a little boiling water.
  10. Stir gently until smooth. Remove the pan from the heat as soon as the curd has the desired thickness. Let it cool down in the fridge.
  11. Remove the cake from the oven and leave to cool. Pour/spread the curd on top of the cake and put in the fridge for 15 minutes.
