  • Brownies with pitahaya topping

Everyone likes freshly baked brownies. Make it even more special by putting a beautiful pink pitahaya topping on top of the brownie.


Chocolate brownie:
  • 360 g white caster sugar
  • 320 g butter
  • 50 dl water
  • 12 g vanilla sugar
  • 400 g dark chocolate
  • 4 eggs
  • 375 g flour
  • 2 g baking powder
  • pinch of salt


  • 2 EAT ME red/red pitahaya
  • 1 EAT ME lime
  • 2 gelatin leaves
  • 2 tsp. icing sugar
  • 50 g pistachio nuts
  • Bag of chocolate Easter eggs

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Bring the caster sugar, butter, water and vanilla sugar to the boil in a saucepan. Stir well.
  3. Add the chocolate and let it melt. Remove the pan from the heat, add the eggs and use a whisk to stir well.
  4. Sift the flour and add to the dough together with the baking powder and the salt. Stir well.
  5. Grease a baking tin with a little butter and pour the chocolate brownie mixture into the baking tin.
  6. Bake the brownies in the oven for 20 minutes. Then let the brownies cool down well.
  7. Cut the pitahayas in half lengthwise and spoon the flesh out of the skin. Puree the flesh in a blender.
  8. Put the pureed pitahaya together with the juice of the lime and powdered sugar in a saucepan and bring to the boil.
  9. Place the gelatin in cold water. Squeeze the gelatin leaves and add this to the pitahaya and bring to the boil together. Immediately remove from the heat when the gelatin has dissolved and place in the refrigerator.
  10. Pour the pitahaya juice over the brownies when it starts to gel. Allow the brownies to set in the fridge for 1 hour.
  11. Finely chop the pistachio nuts. Decorate the cake with the pistachio nuts and chocolate Easter eggs.
