Start the day well with light and healthy pancakes. Blueberries give this dish a fresh flavour.

Ingredients

  • 125 g EAT ME organic blueberries
  • 1 lime
  • 250 g buckwheat flour
  • 3 eggs
  • 2 tsp. baking powder
  • 2 dl (almond) milk
  • ½ tsp. vanilla sugar
  • ½ tsp. cinnamon
  • coconut oil for frying
  • salt

Let's get to work

Preparation
  1. Use a lemon to degrease the mixer and the bowl.
  2. Separate the eggs and beat the egg whites firmly.
  3. Mix the egg yolks in a separate bowl together with the milk.
  4. Add the buckwheat flour and baking powder to the egg and milk mixture and stir until smooth.
  5. Rinse and grate the zest of the lime. Add the lime zest together with the salt, vanilla sugar and cinnamon to the batter.
  6. Fold the egg whites into the batter.
  7. Rinse the blueberries and mix them into the batter.
  8. Heat the coconut oil in a frying pan and fry the pancakes on both sides until golden brown.
