You can make lots of delicious dishes using blueberries. One of them is this delicious blueberry bavarois in a turban mold. The big surprise of this blueberry bavarois is the pitahaya sauce. This will taste great!


  • 1 EAT ME red pitahaya
  • 250 g EAT ME blueberries
  • 125 g EAT ME raspberries (decoration)
  • 125 g EAT ME blackberries (decoration)
  • 2 EAT ME limes
  • 200 ml apple juice
  • 6 leaves of gelatine
  • 75 g sugar
  • 3 g vanilla sugar
  • 300 ml cream

Let's get to work

  1. Rinse and puree the blueberries using a blender or a stick mixer and put it in a saucepan.
  2. Soak the gelatine leaves in a bowl with cold water for 10 minutes.
  3. Slice the lime in two and squeeze the juice.
  4. Add the sugar, apple juice, vanilla sugar and the juice from 1 lime to the pureed berries.
  5. Bring close to the boil. Remove the gelatine from the water, squeeze the excess water out of the soaked gelatine and add to the mixture.
  6. Bring close to the boil again and wait until the gelatine is dissolved.
  7. Take the pan off the heat and put it in cold water in the sink and leave to cool down.
  8. In the meantime, whisk the cream until it has a yoghurt like consistency.
  9. Wait until the berry mixture has cooled down and is starting to turn into jelly.
  10. Than mix the cream into the mixture and pour the bavarois in a turban shaped mold. Place in the fridge for about 2 hours to stiffen.
  11. Slice the pitahaya vertically in half and spoon the flesh out of the fruit.
  12. Place the flesh in a saucepan and use a fork to mash it finely.
  13. Slice the lime in two and squeeze the juice.
  14. Add 50 ml cream, the juice of 1 lime and 25 g sugar to the saucepan.
  15. Simmer gently and use a whisk to stir until it is smooth. Put the sauce in the fridge as well.
  16. After 2 hours take the bavarois from the fridge. Use a large container, one in which the turban mold fits, and fill with hot water. Hold the mold in the hot water for 10 seconds and then take it out. Carefully push the edges. Place the mold upside down on a plate and remove carefully.
  17. Pour the pitahaya sauce on top of the bavarois.
  18. Decorate with raspberries, blackberries and blueberries if you wish.
