  • Bimi® and shiitake mushrooms frittata

A frittata is an Italian egg recipe to which you can easily add lots of vegetables. Have a large piece with a salad as a main course or a smaller piece as an entrée, snack or lunch.


  • 200 g EAT ME Bimi®
  • 100 g shiitake mushrooms
  • 100 g gorgonzola
  • 1 red pointed sweet pepper
  • 1 shallot
  • 40 g grated Parmesan cheese
  • 6 eggs
  • Pepper and salt
  • 1 tbsp olive oil

Let's get to work

  1. Preheat oven to 200°C. Use a saucepan and bring water, with a pinch of salt, to the boil. Blanche the Bimi® for 4 minutes. Then rinse the Bimi® with cold water and leave to drain in a colander.
  2. Cut the shiitake mushrooms in slices and slice the pointed sweet pepper in small strips. Slice the shallot in small strips.
  3. Whisk the eggs together with the Parmesan cheese in a bowl. Add salt and pepper to taste.
  4. Use olive oil to grease a baking tin and place the Bimi®, shiitake mushrooms, shallot and the pointed sweet pepper in it.
  5. Pour the egg mixture on top of the vegetables. Divide small pieces of gorgonzola on top of the egg.
  6. Bake the frittata until done in the oven for 15 to 20 minutes.
  7. Serve the frittata in one piece or slice into parts.
