Have you ever tasted the suprising combination of beetroot and ginger? It is a great combination as you will see when you try this recipe.


  • 600 g EAT ME beetroots
  • 20 g EAT ME ginger
  • 2 cloves of garlic
  • 1 apple
  • 2 dl coconut milk
  • 1 spring onion
  • 1.5 Lvegetable stock
  • 3 tbsp. olive oil
  • 4 tbsp. crème fraîche

Let's get to work

  1. Peel the ginger and cut into pieces.
  2. Chop the onion and crush the garlic with a garlic press.
  3. Heat olive oil in a frying pan and fry the onion, garlic and ginger.
  4. Peel the beetroots and apple and chop coarsely. Add the beetroots and apple.
  5. Deglaze with vegetable stock and bring to the boil with the lid kept on the pan. Turn down the heat.
  6. Meanwhile, cut the spring onions into fine rings.
  7. Puree the soup after 20 minutes with a stick mixer.
  8. Mix the coconut milk into the soup and season with pepper.
  9. Serve with crème fraîche and spring onions.
