  • Baked sweet potato with cranberry sauce

A large steamy sweet potato filled with cranberry sauce, doesn't that sound great? Baked sweet potatoes are delicious and healthy. Ideal as a side dish and easy to make.


  • 8 EAT ME sweet potatoes
  • 1 bag EAT ME cranberries (340 gram)
  • 8 sprigs EAT ME parsley
  • 200 ml red wine or port (alternatively: water)
  • 150 g sugar
  • ½ tsp vanilla sugar
  • 1 tbsp. honey
  • A pinch of cinnamon

Let's get to work

  1. Preheat the oven to 200˚C.
  2. Wash and dry the sweet potatoes. Place each potato in tinfoil and put them in the oven.
  3. Bake about 30 minutes in the oven until done.
  4. In the meantime, make the cranberry sauce. Mix the cranberries, wine/port (or water), vanilla sugar, honey and cinnamon all together in a saucepan and bring to the boil on a low heat. Let it boil gently for 2 minutes and remove the pan off the heat. Leave the sauce to cool down in the pan on a cooling rack.
  5. Take the sweet potatoes out of the oven, when they are done, and remove the tinfoil. Carefully slice the potato lengthwise, half way down into the potato.
  6. Partly pull the potato open and fill it with the cranberry sauce.
  7. Decorate with a parsley sprig if you like.
