  • Baked salmon with limequats and mini courgette

A refreshing tangy flavour together with salmon is delicious. Give your salmon recipe an extra dimension by adding slices of limequats. These small tangy citrus fruit go well with the mini courgette in regards to taste and presentation.


  • 4 EAT ME limequats
  • 4 EAT ME mini courgettes
  • 4 fresh skin-on salmon
  • 8 cherry tomatoes
  • 1 tbsp fish seasoning
  • 3 tbsp olive oil

Let's get to work

  1. Pre heat oven to 200 °C.
  2. Rinse the mini courgettes. Remove the ends, cut the mini courgette across in slices.
  3. Cut the limequats and cherry tomatoes in slices.
  4. Place the salmon skin down on a greased oven tray and lightly season them with 2 tablespoons of olive oil.
    Season the salmon fillet.
  5. Place the limequats, mini courgette slices and cherry tomatoes alternately on the salmon fillets.
    Brush them again lightly with a tablespoon of olive oil.
  6. Cook the salmon fillets in the oven until done in 12 to 14 minutes.
