  • Baked apple with cranberry compote

Make delicious cranberry compote with the traditional Christmas product and serve with a sweet apple and smoked duck breast. Set the table for a delicious feast!


Cranberry compote:
  • 340 g EAT ME cranberries
  • 1 EAT ME lime
  • 3 tbs. honey
  • 1 tsp. cinnamon
  • 150 g sugar
  • 50 ml water (alternative: red wine)


  • 4 small apples
  • 4 tbsp. Honey
  • Handful of oak leaf lettuce
  • 150 g smoked duck breast in slices
  • 2 tbsp. pistachio nuts

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Rinse the cranberries and cut the lime in half. Squeeze the juice from the fruit. Bring the ingredients of the cranberry compote to the boil and simmer for about 5 minutes. Then leave to cool to room temperature.
  3. Cut the apples in half and remove the cores.
  4. Place baking paper on a baking tray and place the apples on the baking sheet. Coat the outside of the apples with honey. Place the apples on a baking tray and put the apples in the oven for 20 minutes.
  5. First fill the bottom of the apples with a lettuce leaf. Divide the slices of smoked duck breast and 1 tablespoon of cranberry compote on each plate. Save the rest of the compote to add some more if desired later.
  6. Arrange some lettuce next to or under the apple for an attractive and festive look.
  7. Finely chop the pistachio nuts and sprinkle over the cranberry compote, top with the apple.
