Preparation method

  1. Cut the avocado all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and mash the flesh. Season with salt and pepper.
  2. Brush the bread with the avocado, spread with the salmon and sprinkle with the pomegranate seeds and the cress.
