Great healthy breakfast: avocado toast with smoked salmon and pomegranate seeds. Easy to make, contains a lot of healthy fats and is a satisfying start to the day. Delicious as a lunch as well of course!

Ingredients

  • 2 EAT ME avocados
  • 50 g EAT ME pomegranate seeds
  • 200 g smoked salmon
  • 4 coarse slices of bread
  • cress
  • salt and pepper

Let's get to work

Preparation
  1. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out. Mash the avocados and season with salt and pepper.
  2. Divide the mashed avocado on 4 slices of bread and top with the smoked salmon.
  3. Sprinkle with pomegranate seeds and cress.
