A huge favourite with many people is the avocado toast. Avocado is great to spread on bread, but it is even better to finish it off with various exotic toppings.


  • 3 EAT ME avocados
  • 1 EAT ME lime
  • 8 wholemeal slices of bread
  • Pepper & salt


  • 200 g EAT ME mini green asparagus
  • 1 tbsp. olive oil
  • seasalt

  • 2 eggs
  • 1 tbsp. olive oil

  • 100 g smoked salmon
  • ΒΌ red onion
  • 1 tsp capers
  • garden cress

  • 1 EAT ME pomegranate

Let's get to work

  1. Toast the slices of bread in the toaster.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2
  3. halves apart. Remove the stone, scoop out the flesh and mash.
  4. Wash the lime and cut in half. Squeeze the juice out of the fruit and add it to the mashed avocado.
  5. Evenly divide the mashed avocado over the sandwiches.
  6. Topping 1: Sprinkle the green mini asparagus with olive oil and grill for about 6 minutes in a grill
  7. pan. Sprinkle with sea salt and let cool for a while. Put the green mini asparagus on the avocado

  9. Topping 2: Heat olive oil in a frying pan and fry 2 eggs on low heat. Put the fried eggs on the

  12. rings and place on top of the salmon. Garnish with cress and capers.
  13. 8. Topping 4: Cut the top off the pomegranate. Cut gently along the ridges from the top to the
  14. bottom. Open the fruit. Then remove the seeds from the fruit and spread on the toast.
