  • Avocado soup with shrimp

A simple but delicious refreshing soup with the creamy taste of avocados.

Ingredients

  • 3 EAT ME avocados
  • 2 EAT ME lime
  • 15 g EAT ME parsley
  • 1 shallot
  • ½ tsp cayenne pepper powder
  • 500 ml vegetable stock
  • 2 dl sour cream
  • 250 g Dutch shrimp
  • 3 tbsp. olive oil

 

Let's get to work

Preparation
  1. Chop the shallot finely and place in a food processor.
  2. Cut the limes in half. Now squeeze the juice from 1 lime. Mix the lime juice with the cayenne pepper and pour into the food processor.
  3. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out.
  4. Cut avocado halves into cubes and add it to the mixture in the food processor along with the parsley.
  5. Cut the last avocado half into small cubes and mix with the juice of ½ lime and some salt and pepper. Set aside.
  6. Now gradually add the vegetable stock and sour cream to the mixture.
  7. Mix the shrimp with the juice of the last ½ lime, freshly ground pepper and 2 tablespoons of olive oil.
  8. Pour the avocado soup into soup plates and place the shrimp on top.
