  • Avocado salad with basil dressing

How about making a delicious salad? Enjoy the rich creamy flavour from the avocado in this perfectly combined recipe.


  • 2 EAT ME avocados
  • 40 g EAT ME basil
  • 300 g mixed salad
  • 200 g cherry tomatoes
  • 24 small mozzarella balls
  • 5 tbsp. olive oil
  • 1 clove of garlic
  • 20 g grated Parmesan cheese
  • 20 g pine nuts
  • 1 small shallot
  • pepper & salt

Let's get to work

  1. Roast the pine nuts in a dry frying pan.
  2. Slice the garlic fine.
  3. Rinse the basil.
  4. Mix the olive oil, basil, garlic, Parmesan cheese and pine nuts in a bowl, using a stick mixer until it has turned into a pesto dressing. Add pepper and salt to taste.
  5. Place the salad on the four plates.
  6. Halve the tomatoes and divide them over the plates, do the same with the mozzarella balls.
  7. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the
    2 halves apart. Remove the stone with a spoon and scoop the flesh out and cut into thin slices.
    Divide the slices over the plates.
  8. Sprinkle the basil-pesto dressing over the avocado salad.
