Avocado can be prepared in many different ways. The taste is soft and creamy, perfect to be made into a mousse! Delicious with pieces of turkey and apple cubes.


  • 2 EAT ME avocados
  • 1 EAT ME lime
  • 150 g smoked turkey
  • ½ bell pepper
  • ½ apple
  • 1 tbsp. crème fraîche
  • ½ shallot
  • 1 clove garlic
  • salt and pepper
  • lettuce

Let's get to work

  1. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out and put in food processor.
  2. Halve the lime and then squeeze the juice from the fruit.
  3. Add the garlic, the shallot, the lime juice and the crème fraîche and mix into a soft mousse. Season to taste with salt and pepper.
  4. Cut the turkey, apple and pepper into thin cubes.
  5. Divide the avocado mousse over the glasses and place the apple, turkey and peppers on top of the mousse. Decorate with a tuft of lettuce.


Serve the avocado mousse with a small spoon of cranberry compote. Surprisingly delicious!
