Did you know that you can make delicious ice cream from avocado? Also, useful to make from avocados that you have left for just too long.

Ingredients

  • 2 EAT ME avocados
  • 400 ml of coconut milk
  • 125 g cane sugar
  • 150 g pistachio nuts

Let's get to work

Preparation
  1. Heat the coconut milk together with the cane sugar in a saucepan, but make sure it does not boil.
  2. Remove the saucepan from the heat when the cane sugar has dissolved and allow it to cool for more than 1 hour.
  3. Grind the pistachios into powder and set aside.
  4. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone, spoon out the flesh and put in a blender. Pour in the coconut milk and mix until smooth. 
  5. Pour into a bowl, fold in the ground pistachio nuts and put it in the freezer for 1 hour.
  6. Then remove the slightly frozen mixture from the freezer and mix again on a low setting in the blender. 
  7. Pour back into the bowl and return it to the freezer for 7 hours.
  8. Serve with toppings of your choice.
