A great healthy lunch: Avocado with smoked salmon and egg from the oven. Very nice and very simple! Great as breakfast as well. The creamy nutty flavour of the avocado combines perfectly well with the smoked salmon and egg.

Ingredients

  • 3 EAT ME avocados
  • 20 g EAT ME chives
  • 125 g smoked salmon
  • 6 eggs (small)

Let's get to work

Preparation
  1. Preheat the oven to 180˚C.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon.
  3. Place the avocado halves on an oven tray and place a piece of smoked salmon in the avocado.
  4. Crack the egg in a bowl, use a spoon to remove the egg yolk and place it on top of the smoked salmon in the avocado halves. Try to add a little bit of egg white from the bowl to the egg yolk. Repeat this with every avocado half.
  5. Place the avocados in the oven and bake until done in about 8 to 9 minutes.
  6. Rinse the chives and cut very finely.
  7. Take the avocados from the oven and place them on a dish.
  8. Decorate the avocados with the finely cut chives.
