  • Avocado filled with chicken-pesto salad

This dish is delicious for brunch, but can also be used as a starter. This recipe is quick and easy to make.


  • 2 EAT ME avocados
  • 4 leaves mixed lettuce
  • 2 tomatoes
  • 4 tsp. pesto
  • 200 g smoked chicken fillet


  • 1 punnet EAT ME edible flowers

Let's get to work

  1. Cut the chicken fillet into small cubes.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone and spoon out the flesh and cut into cubes.
  3. Mix the pieces of avocado in a mixing bowl together with the chicken cubes and pesto.
  4. Wash the tomatoes and cut into slices.
  5. Fill the 4 avocado shells with the chicken-pesto salad.
  6. Decorate the salad with a lettuce leaf, 2 slices of tomato and an edible flower.
