Ingredients

  • 3 EAT ME avocados
  • 1 (wholegrain) baguette
  • 1 clove garlic
  • 1 small shallot
  • salt & pepper

Topping 1:

  • 300 g mushrooms
  • 2 tbsp. olive oil

Topping 2:

  • 250 g cherry tomatoes
  • 1 tsp. black sesame seeds
  • 1 tsp. white sesame seeds

Topping 3:

  • 100 g herbed cream cheese
  • 6 slices of parma ham

Let's get to work

Preparation
  1. Cut the baguette into equal slices of 1 cm thick.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2
  3. halves apart. Remove the stone and scoop out the flesh. Cut 1 avocado into thin slices and mash the other 2 avocados.
  4. Chop the shallot, press the garlic with a garlic press and mix with the avocado. Season with salt and pepper.
  5. Rinse the cherry tomatoes and cut into segments.
  6. Slice the mushrooms, season with salt and pepper and fry in the olive oil until golden brown.
  7. Spread 2/3 of the baguettes with avocado puree. Cover half of the baguettes with the fried
  8. mushrooms and the other half with the cherry tomatoes and sesame seeds.
  9. Spread the remaining baguettes with herb cheese and put the slices of Parma ham and avocado on
  10. top. Season to taste with salt and pepper.
