This creative recipe of a classical entree combines the full rich taste of avocado with the salty flavour of the Dutch shrimp and the peppery, nutty taste of the rocket lettuce. Surprise your friends and family with this tasteful and attractive starter.

Ingredients

  • 3 EAT ME avocados
  • 50 g rocket
  • 100 g Dutch shrimp
  • 200 g of sun-dried tomatoes
  • 6 tsp. pesto
  • pepper & sea salt

Let's get to work

Preparation
  1. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone, scoop out the flesh and slice thinly. Use 1 avocado per plate.
  2. Season the avocado to taste with salt and pepper.
  3. Spread the pesto on the avocado.
  4. Scatter the rocket in the middle of the plates.
  5. Complete the dish by scattering the Dutch shrimps and sundried tomatoes on the rocket.
