This creative recipe of a classical entree combines the full rich taste of avocado with the salty flavour of the Dutch shrimp and the peppery, nutty taste of the rocket lettuce. Surprise your friends and family with this tasteful and attractive starter.

Ingredients

  • 3 EAT ME avocados
  • 50 g rocket lettuce
  • 100 g Dutch shrimp
  • 200 g marinated, semi-dried tomatoes
  • 6 tbsp pesto
  • pepper & sea salt

Let's get to work

Preparation
  1. Cut the avocados in half, remove the stones and carefully scoop the avocado out in 1 piece.
  2. Cut the 6 avocado pieces in thin slices.
  3. Fan out 1 avocado per plate and season it with some salt and pepper to taste.
  4. Give it a little extra spice by spreading 2 teaspoons of pesto per avocado.
  5. Arrange the rocket lettuce nicely in the middle of the plate add the Dutch shrimp and marinated tomatoes and your dish is ready.
