Go for colour! Make a light and fluffy green cake using avocados. Delicious with a coconut frosting.

Ingredients

Cake

  • 2 Eat ME avocados
  • 50 g butter
  • 250 g flour
  • 230 g brown sugar
  • 5 eggs
  • 2 tsp. baking powder

Coconut frosting

  • 100 g butter
  • 100 g icing sugar
  • 100 g coconut milk
  • 50 g coconut oil
  • 1 tbsp. cornflour
  • 1 tbsp. grated coconut

Let's get to work

Preparation
  1. Preheat the oven to 170 ┬░C.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone and spoon out the flesh and mash.
  3. Mix the butter and sugar together and beat the eggs one by one. Mix until the mixture is light and fluffy.
  4. Fold the flour, the baking powder and the avocado in the dough.
  5. Grease a cake tin with a knob of butter, pour in the dough and bake the cake for about 50 to 60 minutes.
  6. Make the coconut icing by melting the coconut oil and the butter. Then add the icing sugar and coconut milk. Bring to the boil and lower the heat.
  7. Mix the cornflour with 1 tablespoon of water to a smooth mixture and add to the coconut frosting.
  8. Bring to boil again, remove the pan from the heat and let the frosting cool in the fridge. Pour the frosting, as soon as it has cooled down, on top of the cooled cake and sprinkle with the grated coconut.
