  • Acar with ginger and turmeric

Acar is a well-known Indonesian side dish. The fresh taste of acar combines well with spicy dishes and therefore plays an essential role in the Indonesian kitchen. The turmeric gives the Acar its distinctive colour.

Ingredients

  • 30 g EAT ME ginger
  • 1 EAT ME rawit pepper
  • 40 g turmeric
  • 1 clove of garlic
  • ½ cauliflower
  • ½ cucumber
  • 1 medium sized carrot
  • ½ red bell pepper
  • ½ cabbage
  • 600 ml water
  • 600 ml white vinegar
  • 8 tbsp sugar
  • 1 tbsp olive oil

Let's get to work

Preparation
  1. Peel the turmeric and the ginger and cut in large pieces.
  2. Rinse the rawit pepper, cut in half and remove the seeds. Slice the pepper in very small pieces.
  3. Cut the garlic in large pieces.
  4. Use the olive oil to sauté the garlic, turmeric, ginger and the rawit pepper in medium sized pan for 4 minutes.
  5. Deglaze with the water and the vinegar. Add the sugar and bring to the boil.
    Leave the mixture to simmer gently for 30 minutes.
  6. In the meantime slice the bell pepper in half and remove the seeds. Cut the bell pepper in thin strips.
    Peel the carrot and slice it together with the cucumber in thin strips as well . Cut the cauliflower into small rosettes.
  7. Sieve the spice mixture.
  8. Bring the sieved liquid back to the boil and add all the sliced vegetables. Leave to simmer gently for 7 minutes, leaving the lid on the pan.
  9. Take the vegetables of the heat and leave to cool down on a cooling rack for about 1 hour,
    still keeping the lid on the pan.
  10. When it has cooled down put the acar in a preserving jar or some kind of sealable container.
    Keep in the fridge.

Tip

The acar can be kept in the fridge for 3 to 4 weeks and is a perfect combination with satay for example.
